VANILLA MINI DOUGHNUTS WITH A CHOCOLATE GLAZE

Ingredients

  • 2 cups of Bob's Red Mill 1-1 baking flour

  • 3/4 of a cup of granulated sugar

  • 2 teaspoon of baking powder

  • 1 teaspoon of salt

  • 3/4 of a cup of almond or coconut milk

  • 2 eggs

  • 2 teaspoon of pure vanilla extract

  • 1/2 cups of canola oil

  • 1 cup of powdered sugar

  • 1/4 cup of cocoa powder

  • 3 tablespoons of water


Instructions

  1. Preheat your mini doughnut maker. In a large bowl combine the flour, granulated sugar, baking powder, and salt.

  2. In a small mixing bowl whisk your almond or coconut milk, eggs, vanilla extract, and canola oil.

  3. Add the wet ingredients to the dry ingredients and whisk to combine. 

  4. Next grease your mini doughnut maker and pour batter into it. Repeat this step multiple times until all of the batter is gone. 

  5. Now you can glaze your doughnuts by mixing the powdered sugar, cocoa powder, and water together. Then pour evenly over top of your mini doughnuts.
